3 eggs

90 ml of lemon juice (80 ml original recipe)

150 grams of sugar

56 gr unsalted butter, diced

1 tablespoon lemon zest (lemon zest)

How to make :

1. Heat water. Set aside.

2. In pan sauce, mix eggs and sugar, stirring with whisker until evenly mixed and then adding lemon juice.

3. Place the pan sauce over a pan containing the water (double boiler), reduce the heat. Stir constantly so that nothing clots. After 10 minutes, the lemon curd texture will thicken.

4. Lift from the pan, add the butter and lemon zest. Stir until melted and even butter.

5. Let the steam heat up and then cover it with cling wrap. After being cold it can be stored in the refrigerator.
